Instant Pot Pulled Pork Sliders- Perfect for any party.
If using a crockpot, sear meat in a separate skillet/ pot, layer some onions on the bottom of the crockpot along with meat and other ingredients as directed and cook for 8 hours on low.
Dry Rub • 2 Tablespoon brown sugar • 1 teaspoon garlic powder • 1 Tablespoon paprika • 1 Tablespoon chili powder • 1 teaspoon salt • 1 teaspoon pepper • 1 teaspoon cumin • 1/4 tsp cayenne powder (optional)• 3-4 pound boneless pork roast / shoulder, cut into 4 pieces • 2 Tablespoons oil • 1 cup water (or beer, coca cola or root beer) • ½ cup apple cider vinegar • 2 cups barbecue sauce, divided• ½ cup of leftover cooking liquid (optional) • Hamburger or slider buns
In a bowl, combine ingredients for the dry rub.
Rub all sides of the meat with the dry rub.Press SAUTE.
Once hot, add in the oil and sear pork on all sides until browned, working in batches, if needed. Remove and set aside.
Add in water or beer and deglaze the bottom of the pan using a wooden spoon. Press CANCEL.
Stir in apple cider vinegar and 1 cup of barbeque sauce. Add in meat. Close lid and set valve to sealing.
Cook on manual high pressure for 60 minutes. Naturally release for 10 minutes and release remaining pressure.
Remove meat and shred using 2 forks. Mix in the remaining cup of barbeque sauce and ½ cup of left over cooking liquid.
Serve on buns with cabbage or coleslaw or your favorite toppings.
