Zucchini Noodles with Pesto



A healthy and delicious dish and the best part- no cooking involved! Great for lunch meal prep or light dinner.


Zucchini Noodles with Pesto


Ingredients

Zucchini

Tomatoes


Pesto:

1 cup fresh basil

½ cup nuts (walnuts, pine nuts, etc)

Zest and juice of 1 lemon

1/4 cup grated parmesan cheese

2 garlic cloves

1 teaspoon each salt and pepper

1/4 cup olive oil


Directions:

Use a julienne peeler or spiralizer to make  zucchini into noodles. Set aside.


Pesto: In a food processor, add basil, nuts, zest and juice of lemon, parmesan cheese, garlic, salt and pepper and process together. Begin to add olive oil while the food processor is still running and process until blended

To serve: combine zucchini and pesto and toss together. Top with tomatoes.


Note: I prefer eating this dish raw but you can sauté in a skillet for a few minutes before tossing with pesto, if desired.
