Healthy, delicious and hearty, this one pot dish makes the perfect meal or side dish.
Ingredients 1 Tablespoon olive oil 1 onion, diced 3 cloves of garlic 2-3 sweet potatoes, peeled and diced in cubes 1 Tablespoon curry powder 1 Tablespoon cumin 1 teaspoon salt 1 teaspoon pepper 1 (15oz) can diced tomatoes 1 (15oz) can chickpeas (garbanzo) rinsed and drained 1 cup coconut milk (or more as needed) 10 oz frozen spinach or use fresh (optional) Rice for serving ( brown, basmati or white) Garnish: Cilantro, minced
Directions Heat oil in a skillet. Add onions, garlic and sauté for a few minutes.
Add sweet potatoes, curry powder, cumin, salt and pepper and continue to sauté for a few minutes. Add tomatoes, chickpeas and liquid and bring to boil.
Cover, reduce heat and cook until sweet potatoes are soft.
Add spinach and continue to cook for a few minutes.
