Spaghetti Nests

Ingredients

  • Spaghetti

  • 1 Tablespoon olive oil

  • 1/2 - 1 onion, diced

  • 3-4 garlic cloves, minced

  • 1/2 teaspoon red pepper flakes (optional)

  • 1 (28oz) can crushed tomatoes or whole tomatoes

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • Grated Parmesan cheese

  • Mozzarella balls

  • Optional toppings: grated parmesan cheese, basil or parsley

Directions

Cook spaghetti in salted water according to package directions for al dente.

Heat oil in a pan. Add onions and sauté for a few minutes. Add garlic and red pepper flakes and sauté for about 1 minute.

Stir in tomatoes, oregano, salt and pepper and simmer until spaghetti is ready. If using whole tomatoes, use an immersion blender, wooden spoon or a potato masher to break up the tomatoes as the sauce cooks.

Taste and add more salt and pepper as needed. Reserve 1/2 cup of sauce and set aside. To the sauce, add spaghetti, about 1/4 cup of pasta water and some grated parmesan cheese and stir together.

To make nests: get a forkful of spaghetti and twist on a large wooden spoon or spoon to form nests. Place on a serving platter or baking dish if heating in the oven.

Top nests with remaining sauce. Add mozzarella balls in the middle of each nest, add optional toppings and serve.

To make ahead, heat in the oven until warm and add optional toppings before serving.
