A simple one pan dinner with seasoned chicken and vegetables roasted on one pan. Serve with tortillas or as a bowl. Easy Peasy!
Ingredients 2-3 chicken breasts, cut into strips 2 bell peppers, cut into strips 1 onion, sliced thin 2 Tablespoons olive oil 1 teaspoon salt 1 teaspoon pepper 1 teaspoon garlic powder 1 teaspoon paprika 1 teaspoon cumin 1 Tablespoon chili powder 1/2 teaspoon oregano Garnish: cilantro Serving: Tortillas, rice or quinoa
Directions Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.
Cut chicken, bell peppers and onions into strips and lay on the baking sheet evenly. Drizzle with olive oil.
In a bowl, add in salt, pepper, garlic powder, paprika, cumin, chili powder and oregano.
Sprinkle on top of the chicken and vegetables and toss together to combine.Spread evenly and bake for 15-20 minutes or until chicken is cooked through.
