Pickled red onions are so addictive and so easy to make! They are great anytime you need some zing to you dish such as sandwiches, burgers, eggs, tacos, meats, salads, pizza, etc.
They will last about 2 weeks in the refrigerator and the flavor gets better as the onions marinate.
Picked Red Onions
1 cup water
1/2 cup apple cider vinegar ( or white vinegar)
1 teaspoon salt
1-2 Tablespoons sweetener ( honey, sugar, etc.)
Optional: red pepper flakes or peppercorns
1 medium red onion, peeled and thinly sliced
In saucepan add water, apple cider vinegar, salt and sugar and stir. Heat until sugar / salt is dissolved and turn off heat. While it cools, slice onions and place in a container or jar. Pour vinegar mixture over the onions. Place the lid and give it a shake to combine ingredients.
Let marinate at least an hour or place in the refrigerator until ready to use.
