Pan Fried Smashed Potatoes

Fluffy in the inside and crispy outside - one of my favorite ways to enjoy potatoes and the perfect side dish with any meal.

You can also boil the potatoes ahead of time and pan fry when prepping your dinner.

Pan Fried Smashed Potatoes


2 lbs baby potatoes 1 teaspoon salt 1 Tablespoon olive oil 3 cloves garlic, minced 1 Tablespoon butter ( or add more oil) Optional garnish: herbs and parmesan cheese


Add potatoes and salt to a large pot. Add enough water to cover the potatoes and simmer for 12-15 minutes or until they are fork tender. Drain.

Heat oil in a large skillet. Add garlic and cook for about 20 seconds. Add butter and potatoes and stir potatoes to coat with butter. Smash potatoes with a spatula, potato masher or bottom of a cup . Cook until they are golden brown, flipping over halfway.

Season with salt and pepper and top with optional herbs or parmesan cheese.
