No yeast required and no waiting for the dough to rise makes it a perfect weeknight treat. Make one large dough, divide in half for 2 or make mini sizes for the family with different toppings.
All you need is some wine for a casual date night at home with your Galentine or Valentine this weekend. I made one vegetarian and buffalo chicken for the other. For the buffalo chicken, I used ranch dressing as the sauce and mixed shredded chicken with buffalo wing sauce and melted butter.
To make shredded chicken, I used the Instant Pot. I didn't add any seasoning as I was adding buffalo sauce but feel free to add salt and pepper to the chicken before cooking.
Add chicken breasts or thighs to the instant pot
Add 1 cup chicken broth or water
Cook on manual high pressure for 10 minutes.
Let naturally release for 5 minutes before releasing remaining pressure
Use 2 forks to shred chicken
No Yeast Flatbread Pizza
2 1/2 cups all purpose flour
1 teaspoon salt
1 Tablespoon baking powder
1 teaspoon sugar (optional)
1 cup warm water
2 Tablespoons olive oil
Sauce, cheese and desired toppings
In a large bowl mix together the flour, salt, baking powder, and optional sugar.
Add water and olive oil, and stir together until combined using a fork or rubber spatula.
Turn out the dough on a lightly floured work surface and knead just until it comes together (don’t over knead as this will toughen the dough).
Cover dough in plastic wrap or a damp towel and let rest for about 15 minutes.
Meanwhile, preheat oven to 400 degrees F. and prep your toppings.
Using a rolling pin, roll out the dough into a round or oval shape. (Don't overwork the dough)

Place dough on a baking sheet lined with optional parchment paper.
Top with sauce, cheese and your favorite toppings.
Bake for 18-20 minutes or until the crust has reached desired crispiness.
