These No-Bake Energy Bites are easy to make, healthy and so irresistibly delicious! You can add or substitute with any other ingredients you have on hand such as oats, dried berries, protein powder etc.
No Bake Energy Bites
1/2 cup unsweetened coconut flakes
1 cup nuts (walnuts, cashews, almonds, etc)
1 cup dates (if dry, soak in warm water for 10 minutes)
1/2 cup nut butter
¼ cup cacao nibs or chocolate chips (optional)
Coconut flakes or cacao powder (optional)
Pulse coconut flakes and nuts together in a food processor. Add dates and process until combined.
Transfer to a bowl. Add in almond butter and cacao nibs/chocolate chips and mix well. Shape into bite size balls. Roll in coconut flakes or cacao powder. Store in refrigerator or freezer.
