Korean Corn Cheese



Have you had Korean Corn Cheese? They are served at Korean bbq restaurants in a sizzling hot platter or as a bar snack in Korea.


You only need a handful of ingredients to make this delicious dish. Serve as a dip with bread /chips or as a side.


This is a great make ahead dish. Add ingredients into a baking dish and place in the fridge. When ready to serve, add cheese and broil / bake in the oven or heat on the stovetop and cover to melt cheese.

I usually make this with fresh corn in the summer but any other time, I use canned. Frozen works as well.




Korean Corn Cheese


Ingredients

1 (15 oz) can corn, drained ( or 2 ears of fresh corn)

1/4 onion, diced

2 garlic cloves, minced

1 red chili, jalapeño or half red bell pepper, chopped (optional)

3-4 Tablespoons mayonnaise

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon pepper

1 Tablespoon butter

1 cup mozzarella cheese (or more)

Optional garnish: green onions


Directions

In a bowl, add corn, onion, garlic, pepper, mayo, sugar, salt and pepper and mix together.

Melt butter in an oven safe pan. Add corn mixture and stir for a couple of minutes to absorb butter. Spread the mixture evenly and top with mozzarella cheese.


Broil on high for few minutes until cheese has melted and top is browned or add cover on stovetop to melt cheese.
