No guesswork as to when your chicken is done - Cooking time is 6 minutes per pound and it comes out perfect every time.
The chicken is so juicy and tender - no dried out oven chicken!
To cook a whole chicken:
Pat dry chicken with a paper towel
In a bowl, mix your favorite spices with 1 Tablespoon of oil to form a paste
Carefully rub the paste underneath the skin on the chicken breasts and all over the chicken.
Sear the chicken in sauté mode (since i was making other dishes with chicken, I omitted this step)
Place cut up onion and lemon inside cavity - (aromatics infuse into the chicken as it cooks giving it flavor)
Place a trivet inside of the Instant Pot with 1 cup of water or broth. (As I was using the liquid for other dishes, I added about 2 cups)
Cook on manual pressure - 6 minutes per pound ( example: 24 minutes for 4 lb chicken)
Natural release for 15 minutes and then release remaining pressure
