Grilled Watermelon Salad with arugula, feta, red onion, and mint is perfect for summer. I had Melissa’s hatch pepper pecans so I added to the salad for a kick. This salad is so good and definitely a crowd favorite!
Watermelon, sliced into disks, about 1 inch thick
Olive oil for brushing
Arugula or any greens
1/4 red onion, sliced
Crumbled feta, goat or Gorgonzola cheese
Mint or basil for garnish
Hatch Pepper Pecans or any nuts - optional
1/4 cup extra virgin olive oil
2 Tablespoons balsamic vinegar
1 garlic clove, minced
Pinch Salt and pepper
Heat a grill pan or outdoor grill. Brush just enough olive oil over watermelon slices to thinly coat. Grill each side 2-3 minutes until grill marks appear. Season with pinch of salt. Cut into bite sized pieces or any shape.
Dressing: Whisk ingredients together in a bowl.
Add arugula on a serving plate. Top with red onions, watermelon, feta, mint, and nuts.
Serve the dressing on the side to drizzle when ready to serve.
