Grilled Steak and Vegetable Salad




This is what you make when you have a fried coming over but don’t have much time to cook and you want something light and simple to share


I seasoned the steak and vegetables with salt and pepper and placed everything on an indoor grill.

The vegetables grilled were: zucchini, corn, red onions, eggplant, mini sweet peppers and tomatoes.


Meanwhile, make a simple dressing of 1/4 cup of olive oil, 2 Tablespoons balsamic vinegar, 1 teaspoon dijon mustard, salt, pepper and some minced garlic.


Serve on a bed of lettuce and lunch/ dinner is ready in no time! (I also added some avocados)
