Chicken Teriyaki Stir Fry with Vegetables. Another easy dinner ready in under 30 minutes. This dish is also great for lunch meal prep.
Ingredients 1 Tablespoon oil Vegetables such as: broccoli, peppers, snap peas, etc 1 Tablespoon oil 1-pound boneless chicken breasts or thighs cut into cubes salt and pepper
Sauce 1/4 cup soy sauce 1 Tablespoon sesame oil 2 Tablespoons honey or brown sugar 2 Tablespoons rice wine vinegar or apple cider vinegar 3 garlic cloves, minced 1 Tablespoon cornstarch
Optional garnish: sesame seeds, green onions,,
Heat oil in a skillet and saute vegetables for a few minutes until soft. Remove from pan.
Add some more oil, add chicken and season with salt and pepper. Saute until chicken is browned, around 5 minutes.
Meanwhile, add sauce ingredients in a bowl and stir together. Add sauce to the pan continue to cook for a few minutes.
Add back the vegetables and stir together. Serve with rice and garnish with optional green onions or sesame seeds.
