Chicken Cacciatore - a delicious and classic Italian chicken recipe. Easy to make for the whole family and can be served over pasta or rice.
Ingredients 4-6 chicken thighs salt and pepper 1/2 cup flour 1 Tablespoon olive oil 1 Tablespoon butter 1 onion, diced 3 garlic cloves, minced 1-2 bell peppers, sliced or chopped 1/2 cup wine or chicken broth 1 ( 28-ounce) can diced or crushed tomatoes 2 Tablespoons capers 1 teaspoon oregano Garnish: parsley or basil
Directions Season chicken with salt and pepper and dredge with flour.
Heat oil and butter in a large skillet and brown chicken on both sides for few minutes until browned. Set aside.
Adding more oil if needed, add onions, bell peppers and garlic and sauté for a few minutes. Add in wine and deglaze the bottom of the pan to remove any brown bits.
Add tomatoes and stir to combine. Add in chicken, capers, oregano and simmer until chicken is cooked through 20-25 minutes.
If the sauce needs to be thickened, remove chicken and boil until the sauce thickens.
Garnish with parsley or basil
