Cheesy Potato Casserole

This is the perfect side for your next holiday event or gathering. The recipe can be made in a casserole dish for a large crowd or in individual servings for smaller gatherings or family dinner.

To save time, I used Melissa’s Baby Dutch Yellow Potatoes which doesn’t require peeling due to their thin skin. You can also assemble the dish ahead of time and place in the fridge until ready to bake. Yay!

What I love about this recipe is its versatility. I added parsley as that ’s what I had on hand, but you can add any fresh herbs and also substitute with your favorite cheese or non dairy items for a vegan option.

The recipe calls for fried onions but I just added a mixture of panko breadcrumbs and parmesan cheese for the topping. I’ll definitely make this dish again for my next gathering!
