Carne Asada with Pico de Gallo

Carne Asada with Pico de Gallo has so much flavor, it will be a crowd pleaser for your weekend plans.

Serve as tacos, as a bowl or over a salad.

Ingredients 2 pounds flank or skirt steak salt and pepper

Marinade 2 garlic cloves, minced 1 jalapeno, diced ½ cup chopped cilantro 1 lime, juiced ¼ cup olive oil 2 Tablespoons white or apple cider vinegar

Pico de Gallo 3-4 tomatoes, seeded and diced 1 mango, diced (optional) ½ red or white onion, chopped 1 jalapeño, minced (without seeds for milder ) ¼ cup chopped fresh cilantro 2-3 garlic cloves, minced 1 lime, juiced salt and pepper to taste

Serving: tortillas or salad


Season both sides of steak with salt and pepper.

Mix marinade ingredients in a Ziploc bag or container. Place steak in the marinade and coat well. Marinate in the refrigerator at least 1 hour (up to 8 hours)

Pico de Gallo: Mix all ingredients together.

Grill steaks using an indoor/outdoor grill until cooked to desired doneness. Let rest for 5 minutes before slicing across the grain.

Serve with tortillas or salad and top with pico de gallo.
