Blueberry Oatmeal Bars



Blueberry Oatmeal Bars - delicious, easy to prepare and can be eaten as a breakfast bar, snack or dessert. I used oat flour for a gluten free option as mentioned in my post yesterday but you can use any flour you have on hand.


These bars freeze well and will last for months in a freezer bag or container. Just thaw them out when ready to eat!


Blueberry Oatmeal Bars


Ingredients


Filling: 2 cups blueberries (fresh or frozen) 2-4 Tablespoons of brown sugar, honey or maple syrup (depending on sweetness level) 1 Tablespoon cornstarch 1/2 teaspoon vanilla Optional: zest or juice of a lemon


Crust / Crumble 1 1/2 cups flour (oat, almond, gluten free, all purpose) 1 cup old-fashioned / rolled oats ½ cup brown sugar 1/4 teaspoon salt optional: 1/2 teaspoon cinnamon 1 stick ( 8 Tablespoons) of butter, melted 1 teaspoon vanilla extract


Directions

Preheat oven to 350 degrees F. Line an 8x8 inch pan with parchment paper and set aside.

Filling: In a saucepan, add in all ingredients and cook for about 5 minutes or until thickened, stirring occasionally. Turn off heat.


While the filing is cooking, make the crust/crumble: In a large bowl, add in flour, oats, brown sugar, salt and cinnamon and mix together. Melt butter and stir in vanilla into the butter. Add to the flour mixture and stir until the dough comes together. SET ASIDE ABOUT 1 CUP FOR THE CRUMBLE.


Place remaining mixture into the prepared pan and evenly press down into the bottom of the pan to form the crust.


Pour the filling evenly over the crust and sprinkle reserved crumble on top of the filling.

Bake for 30-35 minutes or until the top is golden. ( bake 10 minutes longer for frozen berries)


Cool COMPLETELY before slicing the bars. (I usually refrigerate for a couple of hours as it’s easier to cut)
