Banana Oatmeal Cookies

Gluten-free, vegan, and makes a perfect snack for any time of the day!

No eggs, butter or sugar needed. The base is only 3 ingredients: bananas, oats and nut butter. I added chocolate chips but you can also add dried fruit, vanilla, cinnamon, etc.

Notes: Use very ripe bananas for sweetness Mixture can be sticky so it helps to wet your hands before rolling You will get about 8-10 cookies, depending on size Cookies can be frozen up to 2 months. Thaw in the refrigerator before eating For a worm cookie - pop them into the toaster Store in an air tight container.


2 RIPE bananas 1 1/2 cup old fashioned/ rolled oats 1/4 cup nut butter ( peanut, almond, etc) Optional: 1/4-1/2 cup chocolate chips


Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.

In a bowl, mash bananas. Stir in oats and nut butter and mix together. Stir in chocolate chips.

Roll into balls and flatten into cookie shapes (they will not spread in the oven). Place on the baking sheet and bake for 12-15 minutes or until golden. Cool.
