What are you cooking for dinner this weekend? If you’re heading to the store, pick up some chicken and Brussels sprouts for this balsamic chicken recipe roasted in one pan with Brussels sprouts.
4-6 chicken thighs
1 lb Brussels sprouts, sliced in half
1 onion, sliced
3 garlic cloves, minced
2-3 Tablespoons olive oil
salt, pepper and garlic powder
1/3 cup balsamic vinegar
1-2 Tablespoons honey ( or brown sugar)
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper or aluminum foil sprayed with cooking spray.
Place chicken, brussels sprouts, onion and garlic on the baking sheet. Drizzle with olive oil and sprinkle with salt, pepper and garlic powder.
In bowl, mix together balsamic vinegar and honey and pour over chicken and vegetables. Toss to combine.
Bake for 40- 45 minutes until chicken is cooked through.
