Zucchini Fritters

I love making zucchini fritters when I have extra zucchini on hand. Simple to make with minimal ingredients and so yummy for breakfast, appetizer or snack.

I used almond flour for a gluten free option but you can use any flour.

Zucchini Fritters

Ingredients
 
2 large or 3 medium zucchini, grated

1 teaspoon salt

1 large egg, lightly beaten

1/4 cup almond flour ( or all purpose flour)

1/4 cup green onions, sliced

1/2 teaspoon salt

1/2 teaspoon pepper
 
2-3 Tablespoons olive oil

Serving: yogurt or sour cream with green onions.


 

Directions

Cut off the ends the zucchini and grate using the large holes of a grater. Place in a colander set over a bowl or in the sink. Sprinkle with salt and mix together together. Let sit for about 10-15 minutes to draw the moisture out of the zucchini.

Using your hands, squeeze out as much liquid as possible from the zucchini. You can also use a cheesecloth or dish towel to squeeze out the liquid.

In a mixing bowl, whisk the egg. Add in zucchini, flour, green onions, salt and pepper and mix together.
 

Add oil to a large pan over medium heat. Add golf ball sizes of zucchini and flatten with a spatula. Cook on each side for 3-4 minutes or until golden brown.

Serve with yogurt or sour cream topped with green onions.
