Yogurt Marinated Chicken

Give this yogurt-marinated chicken a try when you want to change up your chicken recipe. I used drumsticks but you can use any chicken pieces and your favorite spices!

While vinegar or citrus based marinades can toughen chicken, adding yogurt tenderizes meats, which results in a juicy and tender chicken. You will have better results when marinading for a longer period of time (overnight), but it also works when marinated short term.


 

Yogurt Marinated Chicken

Ingredients

1 cup whole milk greek yogurt
 
1/4 - 1/2 cup cilantro or parsley, chopped
 
Zest from 1 lemon

Juice from 1 lemon
 
3 garlic cloves, minced

1 teaspoon cumin

1 teaspoon paprika
 
1 teaspoon red pepper flakes or cayenne ( optional)
 
1 teaspoon salt

1 teaspoon pepper

2-4 lbs chicken thighs, drumsticks, leg or breasts
 

Directions

In a bowl, add all ingredients except for chicken and stir together.

Place chicken in a ziploc bag or or in a bowl. Add marinade and coat evenly. Marinate for at least 1 hour, up to overnight.
 

Cook the chicken on a grill or bake in the oven.

To bake: Preheat oven to 375 degrees and bake for 45-60 minutes depending on thickness of chicken.
