One Pan Creamy Broccoli Pasta

Quick, easy and delicious! For the pasta, I used Fideo cut spaghetti noodles for faster cooking time. You can use heavy cream, half and half, milk or coconut milk for the cream. And if you prefer a less creamier dish, use more water and less cream.

One Pan Creamy Chicken Broccoli Pasta

Ingredients
 
1 Tablespoon olive oil
 
1 lb boneless chicken breast, cut into bite sized pieces
 
salt and pepper
 
1/2 onion, diced
 
3-4 garlic cloves, minced
 
1/2 -1 teaspoon red peppers flakes(optional)
 
8 oz pasta
 
1 cup water or chicken broth
 
2 cups of heavy cream, half & half, milk or coconut milk ( based on creaminess desired)
 
2-3 cups broccoli florets
 
1/2 cup Parmesan cheese

Directions

Heat oil in a large skillet or pot. Season chicken with salt and pepper and cook for about 5 minutes or until browned. Set aside.

Add onions, garlic and red pepper flakes and sauté for a few minutes. Add pasta, water, heavy cream and bring to a boil. Reduce heat, stir and simmer for about 5-6 minutes, stirring occasionally. Add in broccoli and chicken and continue to cook for a few minutes or until pasta is cooked.

Stir in cheese, taste and adjust seasoning as needed.
